Bhonge laddu is very tasty sweet made up of healthy wheat barn and jaggery.
It is a traditional and almost forgotten recipe of my granny in varhad region of Maharashtra.
In ancient time wheat flour was grinded on stone grinder.
and lots of wheat barn was produced at home.
so with this wheat barn bhonge laddu or you can say sweet pretzels was prepared.
But in early years wheat is grinded in machine so
very less amount of wheat barn is produced, one may think it is quiet difficult to prepare this recipe.
But now a day we all know benefits of wheat barn.
wheat barn is easily available in all grocery shops and we can easily prepare our traditional recipe with less efforts.

INGREDIENTS:
(Dried in sunlight)
. 1 cup course wheat flour
. 3 tbsp jowar flour
. 3 tbsp rice flour
. 7-8 tbsp hot oil
. 1 tsp salt
. water
FOR syrup
. 2 cup jaggery
. 1 cup water
FOR TOPPING
. 1/4 cup sesame seeds
. 1/2 cup course wheat flour
. oil for deep frying
METHOD :
FOR PRETZELS:
.Take all flours and wheat barn in mixer jar and grind it for a second
only to mix them properly with barn.
.Transfer crumbly flour mixture in a big bowl. Add hot oil and salt in it,
mix it well.
. Knead the little tight dough by adding water.
. Cover the dough and let it rest for 10-15 minutes.
. After that knead the dough again.
. Take small portion of dough in palm and roll it in cylindrical rope shape
approximately 5-6 inch long and 1 cm in thickness.
. Fold it from both sides and stick at the center to give pretzel shape.
. I have given traditional shape how my granny used to give you can
give shape as per your choice.
. Arrange pretzels in big flat plate seperatly. and allow to dry them.
. In sunlight dry it for 30 minutes, 15 minutes from each side.
. Or in shadow under fan dry it for 1 hour , 30 minutes for each side.
. After that deep fry all pretzels in a batches carefully till light golden
brown color on medium flame.
FOR SYRUP AND TOPPING
. Add water in jaggery and mix it properly keep it aside for 10 minutes.
. Dry roast wheat flour in a pan well.
. Dry roast sesame seeds also on low flame.
. Then strain jaggery liquid in a pan.
. Boil jaggery liquid to make 1 string consistancy syrup.
ASSEMBLING:
. Arrange fried pretzels in a plate.
. sprinkle roasted wheat powder and sesame seeds on pretzels.
. pour hot jaggery syrup on it and mix well.
. Bhonge laddu or traditional Indian sweet pretzels are ready.
. Allow to set it for 1 hour ,then enjoy with pure ghee.
