Kanda Thalipeeth Recipe
Thalipeeth is traditional Maharashtrian snack recipe.
Thalipeeth is perfect combination multi grain flours, vegetables and spices.
It very tasty and healthy generally served with fresh butter,curd or pickle.
There are different types of thalipeeths prepared in Maharashtra.
In this video I am showing very easy instant Kanda thalipeeth,having yummy taste.

Ingredients:
.2 cup chopped onion
.2 cup wheat flour
.1 cup jowar flour
.1 cup rice flour
.1 cup chick pea flour
.2 tbsp garlic paste
.1 tbsp carom seeds(ajwain)
.1 tbsp crushed cumin seeds(jeera)
.1 tbsp crushed fennel seeds(sauf)
.5 tbsp sesame seeds
.1&1/2 tbsp red chilly powder
.1 tsp turmeric powder
.salt
.1/2 cup chopped coriander leaves
. oil
. water
Method:
. Take big bowl and add chopped onion ,coriander leaves,garlic paste,carom seeds,
crushed fennel seeds,crushed cumin seeds,sesame seeds,red chilly powder
turmeric and salt in it.
. Also add 5-6 tbsp oil in it,and mix it well.
. Then add all flours one by one and again mix it well.
. Knead very soft and smooth dough by adding enough water and keep it aside
for 10 minutes .
. To spread thalipeeths ,dough should be very smoother.
. Heat tawa on low flame.
. Take cotton cloth and wet it with water,remove excess water from cloth.
. Spread cotton cloth on rolling board.
. Wet palm and take some dough in it and roll it.
. Place dough on wet cloth and again wet palm,spread thalipeeth evenly on cloth.
. Make a hole at the center of thalipeeth to add oil .
. Spread little oil on hot tawa.
. Lift the cloth and place the thalipeeth side on tawa,and remove cloth carefully.
. cover thalipeeth with lid for 1 minute.keep flame low.
. After that add little oil on it and roast thalipeeth from both sides.
. Keep turning and roast till brown spots appears on it.
. Thalipeeth is ready serve it with pickle,butter,curd...

Bhonge laddu is very tasty sweet made up of healthy wheat barn and jaggery.
It is a traditional and almost forgotten recipe of my granny in varhad region of Maharashtra.
In ancient time wheat flour was grinded on stone grinder.
and lots of wheat barn was produced at home.
so with this wheat barn bhonge laddu or you can say sweet pretzels was prepared.
But in early years wheat is grinded in machine so
very less amount of wheat barn is produced, one may think it is quiet difficult to prepare this recipe.
But now a day we all know benefits of wheat barn.
wheat barn is easily available in all grocery shops and we can easily prepare our traditional recipe with less efforts.

Ingredients for 6 sandwiches :
. 12 white or brown bread slices
. 3 medium size boil,peeled potatoes
. 1 chopped tomato
. 1 chopped capsicum
. 1 chopped onion
. 2 tbsp garlic and green chilly paste
. oil
. salt to taste
. mustard seeds
. cumin seeds
Method :
. Mash boiled,peeled potatoes with masher.
. Add chopped onion,capsicum,tomato, salt in mashed potatoes.
. Heat 2 tbsp oil in tadaka pan then add mustard seeds,cumin seeds,
garlic chilly paste in it and saute well.
. Add this tempered garlic and chilly paste on mashed potatoes and
mix well.
. stuffing is ready.
. Take bread slices and spread little oil on one side.
. Place stuffing on it and spread evenly.
. Cover it with other bread slice keeping oil spread side inside.
. Heat tawa and spread little oil on it.
. Place sandwiches on tawa and keep a flat plate on it.
. Also keep weight on plate, it helps to properly grill the sandwich.
. Grill sandwich for 1-2 minute on low flame.
. Remove plate and apply little oil on upper side of bread.
. Turn the side of sandwich and grill for 1-2 minute.
. Crispy grilled sandwich is ready with out toaster.
. Cut in pieces and serve hot.
Step by step method with pictures

Vangyache bharit is traditional Marathi recipe.It can be cooked in different style,in this video I am showing most popular Khandesh style bharit. It is very tasty and spicy.
There are specific light green color brinjals irrigated in khandesh and known as Jalgoan brinjals, are used for this bharit.
In villages, people generally roasts brinjal on bonfire or on barbecue.

Ingredients:(4-5 serving)
. 1 -kg green brinjal
. 2 -cups or 1 big bowl chopped spring onion
. 1/2- cup course powder of pea nuts
. 1/4- cup dry coconut slices
. 1/2 -cup whole pea nuts
. 2 -tablespoon ginger garlic paste
. chopped green chilly as per taste
. mustard seeds
. 2 -teaspoon cumin seeds
. salt as per taste
. chopped coriander leaves.
. 1/2 -lemon
. oil
Method:
1 wash brinjal with water and puncture them with knife,
grease little oil on it.Roast brinjals directly on gas or
on barbecue till become very soft.
2 Remove outer black skin of roasted brinjals and separate pulp.
Mash brinjal pulp with potato masher till become smooth.
and keep aside.
3 Heat pan and add saute chopped spring onion by adding little oil,
then add it in mash roasted brinjal pulp.
4 Heat oil in a pan,add mustard seeds in it,when it crackled,
add cumin seeds,dry coconut slices and whole peanuts.
5 Saute it till coconut slices and peanuts become brown in color.
6 Add ginger garlic paste,green chilly slices and saute.
then add powdered peanuts and saute for 1 minute on low flame.
7 Add chopped coriander leaves and mix well.
8 Add roasted brinjal pulp and spring onion, salt as per taste
and mix well.
9 Cover with lid for 5 minutes.after that add lemon juice and mix well.
10 Bharit is ready.
tips: 1 Always use fresh brinjals.
2 always check tip of brinjal it must feel soft.
(if it is hard means brinjal contains lots of seeds inside).

Shev bhaji is most famous veg curry dish
having perfect combination masala shev
and spices.
Shev bhaji is very popular dish of
khandesh region of Maharashtra.
Special thick masala shev made up
of besan(chick pea flour)is used
for this curry.
In marathi we call it shevanchi bhaji.
It is a spicy delight which can be
enjoyed with chapati, roti, bhakari,
rice, bread, pav. simply fantastic.

Typical khandeshi khada masala is used in it
which you will get readily in the market.
I generally prefers home made khada masala

INGREDIENTS
FOR SHEV BHAJI
. 7-8 tbsp oil
. 2 chopped onions(1 big cup)
. 5-6 tbsp dry grated coconut
. 1 tbsp godambi
. 3-4 cashew nut
. 3-4 Almonds
. 1 small tomato(1/2 if big in size)
. 1 tbsp poppy seeds
. 10-12 garlic cloves
. 1/2 inch ginger
. chopped coriander leaves
. 1 tbsp red chilly powder or as per taste
. 1 tbsp byadgi chilly
(or kashamiri chilly) powder
. 1 tbsp garam masala
. 1 tbsp khada masala
. 1 tbsp dry coriander seeds powder
. Salt as per taste
. hot water
. Thick size masala shev
METHOD:
. Take 1/2 cup hot water in bowl,
add all the spices (red chilly
powder, bydgi chilly powder,
dry coriander powder,garam masala,
khada masala)
in it and mix well
. Heat pan and saute grated
coconut for 2 minute then add
godambi,poppy seeds,cashew nut,
almonds in it ,and saute till golden
color.
. saute chopped onion adding
little oil till color change,
then add garlic and ginger
and saute for 2 minutes.
. Grind all dry things(roasted
coconut,godambi,poppy seeds,
cashew,almonds)
to make fine powder .
. Add roasted onion,ginger,garlic,
grind to make fine paste.
. saute paste in a pan by adding
oil for 3-4 minutes.
. Meanwhile prepare fine tomato
puree,and add it in
above mixture again saute for
3-4 minutes.
. Add spices mixed in hot water
and saute for 4-5
minutes.
. Add hot water as per required
quantity, salt and mix well.
. Boil rassa for 1 minute,add
corianderleaves
. Rassa is ready.
. Add shev just before serving ,
because shev absorbs
rassa and it will too thick.
. Serve shev bhaji with roti,bhakari,
rice,pav,bread..
